From the Inside Flap

Whether they're served cold, pan-fried until crunchy, or simmered in soup, noodles are a major part of Asia's cuisine. Each country has its own signature dish, from China's Pork Lo Mein to Thailand's Pad Thai to Japan's Yaki-Soba, and the noodles themselves might be made from wheat, rice, or even mung beans. All these dishes have one thing in common, though: They're uniformly delicious. And now, thanks to noted Asian cooking expert Helen Chen, they're a snap to prepare at home.

Easy Asian Noodles includes more than 60 recipes for noodle dishes, all of which are simple enough for even a fledgling Asian cook. If you can make spaghetti, you can make these recipes. Many of them take less than half an hour from pan to plate—it's the perfect way to add variety to hurried weeknight dinners. And the majority use ingredients you'll find in any supermarket—the most exotic ingredient in Chen's Yaki-Soba is Worcestershire sauce!

Chen takes recipes from every corner of the continent and makes them accessible to Western home cooks. After a thorough discussion of Asian noodles in general—glossaries of noodles and other Asian ingredients, the best ways to cook and serve noodles, and the right equipment for the job (most of which you probably already own)—Chen moves on to the recipes, an irresistible selection of simple, foolproof dishes organized into three categories:

Stir-Fried, Pan-Fried, and Sauced Noodles: From China there's Crispy Noodle Cake with Shredded Chicken and Vegetables, Scallion and Ginger Soft Noodles, or Wide Rice Noodles with Beef in Black Bean Sauce; Singapore offers curry-infused Rice Sticks; Thailand brings Pad Thai, of course, but also Crazy Noodles, My Drunken Noodles, and Spicy Basil Beef Noodles.

Soup Noodles: Take comfort in a steaming bowl of Cantonese Roast Duck Soup Noodles or Chinese Chicken Noodle Soup. Learn the simplest possible method to make your own wontons—pork, turkey, or shrimp. Or for a spicy treat, try Peking Hot-and-Sour Noodle Soup, Japanese Curry Udon, or Vietnamese Quick Chicken Ph?.

Cold Noodles and Noodle Salads: Refreshing on a hot day or when you just don't feel like heating up the kitchen—choices include Spicy Peanut Sesame Noodles, Dan Dan Noodles, Japanese Summer Noodle Salad, Iced Somen Noodles, Thai Beef Salad with Deep-Fried Rice Sticks, Vietnamese Poached Shrimp in Herbed Rice Noodle Salad, and ten more.

Filled with straightforward recipes, gorgeous photographs, and expert advice, this is the perfect cookbook for anyone who loves noodles.

If you've ever cooked pasta, you can make impressive (yet amazingly easy) Asian noodle dishes—with Asian food expert Helen Chen as your guide

"I've always joked with my Italian-American sister-in-law, Barbara, that pasta originally came from China to Italy via Marco Polo. Apocryphal or not, noodles have been and remain a major staple in Asian cuisine. Whether they're stir-fried, boiled, pan-fried, served in soup, or tossed with a sauce, they can be enjoyed anytime throughout the day—breakfast, lunch, light dinner, or midnight snack. For most Asians, noodles conjure up thoughts of home, comfort, and good food."—Helen Chen

Delivers!
By Peter
I have only made three of the dishes from this book so far, but each one I've cooked would have easily been worth its price. I whipped up a batch of "Vietnamese Quick Chicken Pho" and enjoyed this light and perky version of a classic Vietnam favorite. No, it was not the interstellar barritone beef broth version you might get from a place which specializes in simmering it for many hours, but it went together fast and had a bright balanced flavor with some deep notes which belied its speedy construction. I next woked up a batch of "Ants Climbing A Tree"-the bean thread staple from China with bits of pork which evoke its unusual name. I don't care what it's called; I call it tasty. Finally, I built the "Cold Sesame Noodles, Sichuan Style" which produced a deep nutty flavor rolling over my taste buds hinting ginger, scallion, garlic, pepper heat, and creaminess from the tahini-fascinating. As a home cook, I see many recipes to be a relationship where time and effort produce better taste. I am amazed at the profoundly delicious tastes of these dishes for such little time and effort. I've only actually tried three so far, but if this keeps up, I'm in trouble-the good kind!

Depends upon what you mean by easy!
By Ms Winston
I was disappointed to see that most of the dishes require many more ingredients than my modest pantry currently holds -- several called for more than 20 ingredients, which is not my idea of "easy" cooking. However, there are many positive aspects of this book, including detailed information on the types of Asian noodles, cooking tools, and ingredients. There are many beautiful full-page color photographs so you can see what the dish should look like when served. In my opinion this is a book more for an intermediate home cook who may already have many of the ingredients and tools, rather than for a beginner in either cooking in general or preparing Asian food.
